Despite how busy we are each day, we still want to prepare a decent and hearty meal for our family. While not all of us have the luxury of time to cook extravagant dinners, we can choose to cook simpler recipes that save time and are just as good. Easy Broccoli Chicken Casserole

What do you need:

  • 1 can condensed broccoli cheese soup

  • 1 package of chicken stuffing mix

  • 2 cups of cubed cooked chicken

  • 1 cup broccoli florets

  • 1 cup shredded cheddar cheese

Combine cheesy broccoli soup (do not water it down!), cooked chicken, and broccoli florets in a large bowl. Transfer the mixture to an 11×7-inch baking dish. Prepare chicken stuffing mix according to package directions, then add to baking dish. Top with cheddar cheese. Cover and bake in a preheated oven (350F) for 20 minutes. When done, remove the lid and continue baking for another 15 minutes. Let cool for several minutes before serving.

Apricot Spiced Chicken

What do you need:

  • 4 boneless, skinless chicken breast halves

  • 1/3 cup apricot preserves

  • 1/4 cup hot sauce

  • 1 tablespoon hot mustard

  • Salt to taste

Combine the apricot preserves, chili sauce, mustard, and salt (you can season with pepper if you like) in a saucepan and mix over medium heat for about 3 minutes, or until heated through. Coat a large baking sheet with cooking spray. Place chicken on baking sheet and grill for 6 to 8 minutes per side, brushing generously with apricot chutney during the last few minutes of cooking. Let cool and rest for a few minutes before serving.

Mexican Chicken Rice

What do you need:

  • 1 can of chopped tomatoes with onion

  • 1 package Mexican-style rice and pasta mix

  • 1 jalapeno pepper, seeded and minced

  • 2 cups diced chicken breasts, cooked

  • 2 butter spoons

Melt the butter in a skillet and cook the rice and pasta mixture for 5 minutes or until lightly browned. Add the tomatoes (with liquid), a little water (about 3/4 cup), and the contents of the rice seasoning packet. Bring the mixture to a boil. Lower the heat and continue cooking for 10 minutes. When done, add the chicken and jalapeno. Cover and cook until liquid is absorbed, about 10 minutes.
