Healthy breakfast recipes for weight loss: Eggs are your best friend

When looking for delicious and healthy breakfast recipes for weight loss, eggs truly are your best friend. Eggs are one of the most natural foods you can eat and also one of the best. 1. Bausti´s breakfast

Serves 1-2

Ingredients

• 3 medium eggs from free-range/organic chickens

• 40 g of courgette

• 60g lightly steamed cauliflower

• 60 g of cooked chicken

• Chili flakes

•Mixed vegetables

method

1. Preheat the oven to 180oC.

2. Chop everything into small pieces.

3. Fill 6 medium muffin tins halfway with chicken and vegetables.

4. Beat 2 of the eggs and add a few chili flakes, then pour the chili and egg mixture evenly into each muffin tin and bake for about 7 minutes.

5. Beat the remaining egg.

6. Fill the muffins with the remaining egg (the reason is that beaten eggs form a bit and then harden during the baking process leaving room for the top).

7. Bake for another 7 to 8 minutes, serve on a bed of vegetables.

2. Eggy Asparagus Soldiers

Serves 1

Ingredients

• 2 organic or large free-range eggs

• 4 asparagus spears

• 1 teaspoon of coconut oil

• Sea salt

• Black pepper

method

1. Boil enough water in a saucepan to cover the eggs by 1 cm.

2. Once boiled, put the eggs gently into the water to prevent them from cracking; boil for 5 minutes to obtain a soft consistency.

3. While the eggs are boiling, heat the oil in a pan and cook the asparagus for 2-3 min.

4. Place eggs in an egg cup and serve asparagus soldiers for dipping, seasoning if needed.
