Christmas Cookie Recipes – Soft Mince Cookies

A deliciously comforting soft baked cookie.

1/4 cup butter; smoothing

3/4 cup packed brown sugar

2 eggs

3/4 cup minced meat

1 1/2 cups all-purpose flour

1 1/2 teaspoons of baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 1/2 cups semisweet chocolate chips

1/2 cup walnuts, chopped, optional

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a bowl, mix the butter and brown sugar. Add the eggs and minced meat; mix well.

In another bowl, combine flour, baking soda, cinnamon, nutmeg, and salt; add to cream mixture; mixing well. Add the chocolate chips and nuts.

Drop tablespoons 2 inches apart on prepared baking sheets. Bake for 10 to 12 minutes or until golden. Let cool completely.

Make 48 cookies.

A fresh citrus flavored cookie that will delight everyone.

1 cup butter

1 1/2 cups of sugar

1 cup buttermilk

3 eggs

2/3 cup orange juice

4 1/2 teaspoons grated orange peel

3 to 3 1/2 cups all-purpose flour

1 teaspoon of baking soda

1 teaspoon of baking powder

Preheat oven to 375 degrees.

In a bowl, mix the butter and sugar. Add the buttermilk, eggs, orange juice, and orange zest.

In another bowl, combine flour, baking soda, and baking powder; gradually add to creamed mixture.

Drop by teaspoonfuls 2 inches apart on ungreased baking sheets. Bake for 10 minutes or until lightly golden. let’s cool Frost with cookie frosting.

1/4 teaspoon orange extract

1/3 to 1/2 cup orange juice

In a bowl, combine the icing sugar, orange extract, and enough orange juice to achieve the desired consistency. Cookies chilled with frost.

2 cups of butter

4 cups semisweet chocolate chips, divided

3 cups of sugar

1 cup baking cocoa

1 tablespoon instant coffee granules

3 cups of packed brown sugar

8 beaten eggs

3 tablespoons vanilla extract

8 cups all-purpose flour

2 teaspoons of baking powder

1 teaspoon salt

1 1/2 cups chopped walnuts

Preheat oven to 350 degrees.

In a Dutch oven over low heat, melt the butter and 2 cups of the chocolate chips. Remove from heat; stirring until smooth.

In a bowl, combine the sugar, cocoa, and coffee; add to butter mixture. Add the brown sugar. Mix the eggs and vanilla.

In another bowl, combine flour, baking powder, and salt; gradually add to chocolate mixture. Add the nuts and the remaining chocolate chips.

Pour by rounded teaspoons 2 inches apart onto ungreased baking sheets. Bake for 10 to 11 minutes or until edges are set. let’s cool down

Makes 222 cookies.
